5 Easy Snacks for a Traveling Vegan

Road trips can be really fun. Get a good playlist, some good friends, and head away for a weekend. Though, if you’re vegan, planning for the food aspect of a long car ride is important; trying to order a vegan burrito at Taco Bell is just not worth it.

I just recently got back home from a short trip down to the beach and I am about to head up to New York City. Traveling with three other vegans and vegetarians means that we all have to work together to make sure we don’t starve during the long drive. Keep reading to find out what my favorite vegan road trip snacks are!

  1. Overnight Oats – This snack is a classic and my all time favorite. Take an equal ratio of water to oatmeal, pop it in the fridge overnight, and there’s your breakfast for the car. Of course, just oats and water is not the tastiest, but one of my favorite things about this recipe is how customizable it is. Here is what you will need to make my version of overnight oats:
    – Steel cut oats
    – Almond butter
    – Banana
    – Chia Seeds
    – Protein powder
    – Cacao powder
    – Cinnamon

To make this yummy breakfast I mix together equal parts of water and oats, smash up half a banana in the bowl, add a tablespoon of chia seeds and a tablespoon of almond butter, add half a serving of protein powder, and sprinkle cacao and cinnamon on top. Feel free to add honey or another type of sweetener if it suits you. I try to refrain from adding sugar to my diet and I think that the banana makes it sweet enough.

2. Seasoned Watermelon – Another one of my go-to snacks, seasoned watermelon is perfect for the hot summer weather and those of us who are mindless snackers. This watermelon will keep you hydrated but not fill you up too much, and it is both a sweet and savory snack. You only need a couple ingredients for this recipe and it is so easy to customize to your preferences. You will need:
– Cubed watermelon
– Salt
– Lime juice (SO essential)
– Cumin
– Coriander
– Chili powder
– Cayenne
All I do to make this is mix my spices in a small bowl, adding a few shakes/ a pinch of each so the ratios are equal, and then sprinkle the mix on top of the watermelon. I then finish off my snack with lime juice. If you are feeling less adventurous try just adding the lime juice on top of the melon- so refreshing!

3. Roasted Chickpeas – I actually bought these from the grocery store recently and I realized how easy they would be to make myself. Like all the other recipes I’ve listed, this one has endless customizations. These chickpeas are great for salads as well as for snacking. A simple google search will present you with thousands of options for this crunchy snack but here is what I use for my favorite flavor combo:
– 1 can of chickpeas (garbanzo beans)
– Salt
– 2 tablespoons olive oil
– Cayenne pepper
– Chili pepper
– 3 tablespoons lemon juice

Just mix all of these ingredients in a big bowl, add the seasoning to your desired heat preference, spread them out on a baking sheet, preheat the oven to 450, and pop them in for 30 to 40 minutes.

4. Roll Up- PB&J roll ups were such a childhood staple for me so eating them now brings back quite a few childhood memories. These sandwiches are pretty much foolproof. I don’t like to eat sweetened jelly so I don’t usually eat the peanut butter and jelly flavor. My favorite things to add are almond butter and bananas. Sometimes I will add a bit of honey on top. If I want to make a savory sandwich I will add hummus, cucumber, and alfalfa sprouts. Below is my recipe for a healthy and filling lunch on the road.

– Whole wheat tortilla wraps
– Hummus
– Cucumber
– Tomatoes
– Spinach
– Alfalfa sprouts
– Trader Joe’s Anything but the Bagel Seasoning

5. Veggie Chips- Kale chips are my favorite version of veggie chips. I love adding garlic and salt to my chips. Zucchini chips and sweet potato chips are also two other really delicious options. The thing that I love about sweet potato chips is that you have the option to make them either more sweet or savory. To make these snacks you will need:
– Sliced sweet potato
– Olive oil
– Sea salt and chili powder (for a savory chip)
– Cinnamon and sugar (for a sweet option)

Arrange the chips on a baking sheet, preheat the oven to 425 and put them in for about 10 minutes. Watch the chips carefully and take them out when they are crispy. Enjoy!
